Yet another theory is that the Romans borrowed the Greek word “lasanon”. Though they used it as “lasanum” and it meant “cooking pot”. Later on, the Italians used it to name the actual dish.
Also, there is an English dish called “loseyn” from the 1300s. It was featured in the cookbook “The Forme of Cury” by the chefs of King Richard II. This dish had similarities with the modern one, but it didn't have tomatoes. They weren’t available in Europe until Columbus discovered America in 1492.
The vegetarian version is often made with no-boil noodles, mushrooms, spinach, tomato sauce, ricotta and mozzarella cheese, and other vegetables. The veggies can include zucchini, onions, red peppers, carrots, and more.
