All About the Lasagna

Lasagna is an Italian food made of flat pasta layers with fillings like:

  • Ragù - Ground meats, tomato sauce
  • Vegetables
  • Cheese - parmesan, ricotta
  • Seasonings
  • Spices - basil, oregano, garlic

In addition, melted mozzarella cheese can be put on top. Usually, the pasta and the ingredients are baked in an oven. And the dish is served in square portions.

The dish originated in Naples, Italy. This was during the medieval period. And the first recipe was included in the “Liber de Coquina” in the early 1300s. The title means “The Book of Cookery”. However, that dish was different from the modern version.

Later, a few different versions were invented:

  • Lasagne di Carnevale - the traditional one from Naples. It has layers of meatballs, ricotta, local sausage, mozzarella, hard-boiled eggs, and Neapolitan ragù.
  • Lasagne al Forno - the one that originated in the Italian region of Emilia-Romagna. It has layers of Béchamel sauce and thicker ragù. The layers are green because spinach is used in the dough.

Etymology

While the dish is Italian, the actual name has traces to earlier times.

In fact, the name comes from the Greek word “laganon” i.e. the first form of pasta. It referred to flat sheets of pasta dough sliced into strips. Of course, the dish was very different from today’s version. And it was made of layers of pasta and sauce. So, without the Italian ingredients.

The name also traces back to Ancient Rome. There was a dish called “lasanum”. The word is Latin for ‘pot’. And it was featured in the “De re coquinaria” book by Marcus Gavius Apicius.

Yet another theory is that the Romans borrowed the Greek word “lasanon”. Though they used it as “lasanum” and it meant “cooking pot”. Later on, the Italians used it to name the actual dish.

Also, there is an English dish called “loseyn” from the 1300s. It was featured in the cookbook “The Forme of Cury” by the chefs of King Richard II. This dish had similarities with the modern one, but it didn't have tomatoes. They weren’t available in Europe until Columbus discovered America in 1492.

Lasagna Variants

Vegetarian


The vegetarian version is often made with no-boil noodles, mushrooms, spinach, tomato sauce, ricotta and mozzarella cheese, and other vegetables. The veggies can include zucchini, onions, red peppers, carrots, and more.

Eggplant


This dish is low in carbs. And it is made with sliced eggplant instead of noodles. The other ingredients are similar to the vegetarian version. This means ricotta cheese, spinach, and mushrooms are also used. To ensure a tasty meal, the eggplant is well seasoned with salt. Also, it is cooked at a high temperature. This gives it a juicy texture.

Keto


This dish is also low in carbs. And it consists of noodles made out of cheese dough. Additionally, the marinara sauce is sugar-free. These make the dish keto-friendly. Other ingredients include ground beef, oregano, basil, onions, and more.

Vegan


The Vegan version is usually made with whole-grain noodles, tofu, tomato sauce, cashew, spinach, and red lentils. The red lentils help to make the texture meaty. And other ingredients can include basil, garlic powder, oregano, fresh lemon juice, mozzarella, spinach, and more.
