Find Local Pizza in Colchester, Connecticut

Colchester was first settled by a group of British pioneers in the late 17th century who had traveled inland from the coastal region of the state. They were an industrious lot who set to clearing the forested lands, constructing saw and grist mills as well as building their homes and farming the land. Fifty years later, the well-organized community had established a town with several streets and public buildings which, along with the prospering mills that provided employment, attracted other settlers to relocate there from other settlements that were not progressing so well in what was by then known as New London. Industrialization of the rural location continued and by the mid-19th century, the town was home to one of the US's first rubber manufacturing plants. When the Depression struck, many of the mills and factories went out of business and the town's residents had to find other means to survive. After the completion of road and rail connections in the 1930s, Colchester began to evolve as both a bedroom community and a countryside tourist destination. A few ambitious Italians realized it was the ideal time for opening restaurants in the town so they did and made a success of their businesses by making traditional Italian food like pizza.

Colchester in Connecticut is known for pan-baked pizza

Whether Colchester is known for pan-baked pizza because it's a method of baking pies that was a family tradition for the town's pizza chefs back in the early days is unclear. It's just as likely that because electric ovens weren't available when the pizzerias in Colchester first opened, pizzas were cooked in wood-fired ovens in a pan to prevent the dough base from burning. Pan-baking pizzas is a method of cooking that goes back centuries and was, and still is, a common way of baking pies in both Italy and Greece. You'll find thick and thin crust cooked in round pans as well as baked in rectangular trays to form the great family-sized pizza known as grandma-style which originates from the traditional Italian al taglio takeaway pizza.
