Salisbury in North Carolina was a planned township from the beginning of its existence in the mid-18th century. Built on six-hundred acres of land where it was crossed by Native American trails, Salisbury took on the role of county seat for Rowan County as soon as the first constructions were completed. As time passed and the original trail routes were improved, Salisbury developed into a central point on what was known as the Great Wagon Road. Good transport links and cheap land prices encouraged cotton mill owners to relocate their businesses to Salisbury and their employees had no option but to follow to where the work was. By the mid-20th century the town had a population of over twenty thousand and the descendants of some of the early Italian migrant mill workers decided it was high time they went into business on their own. They forgot all about textile manufacturing and joined the hospitality industry instead by opening Salisbury's first pizzerias.
Salisbury is known for thin-crust pizzas. Why that should be isn't exactly certain, but could be because the owners of the pizzerias are descendants of Italian families from the Rome or Naples regions of Italy. It could also mean that they're tight when dishing out the dough and like to use half the amount it takes to make a thick crust pizza. But as the pizzerias in Salisbury are all generous with their topping ingredients, it's more likely that the first possibility is closer to the truth than the second. Thin crust pizzas are a type of traditional Italian pizza that, just like thick crust, in their simplest form are just dough, sauce, and cheese. The dough might be hand-pressed, tossed, baked in a pan or tray, but the end result is always the same. A great pizza that's not too heavy on the stomach and tastes amazing.
